Cooking

Cooking has always been something of a contact sport here at ChezRanger.  LadyRanger and I have always been in complete accord in the kitchen.  We spent a lot of Thursday there.  I made one of our favorites:  Suvir Saran's Grandma Hayes's Cornbread.  This is one of our go-to breakfasts in the fall.  And the winter.  And early spring.  We do tweak the recipe a bit.  We use frozen corn for the ease factor.  We also substitute a tablespoon of dried Aleppo Pepper for the jalapeno and cayenne.  Aleppo pepper has a much milder burn and a smokier flavor which we think is just perfect for this delicious bread.

That night for dinner we made Albert Bevia's Mushroom and Red Pepper Paella.  Another great hit!  We have liked every recipe we've tried from Spain on a Fork!

Happy New Year!

A happy new year to all!

How did we celebrate here at ChezRanger?  With a good dinner, champagne by the fire, and our first attempt at Russian Honey Cake

This was some serious work.  And I made it even more difficult for myself by ignoring LadyRanger's advice to spread the making over two days.  A lot of work...

Anyways, there are 8 thin layers of cake (this beast was too tall to go in our large cake-saver!), a VERY sticky batter and lots of whipping cream mixed with sour cream, which is not something I'd have imagined in a cake frosting.  LadyRanger and I both had our doubts about each individual component of this creation, but wow, it turned out well.  You get all these different flavors put together and they are indeed greater than the sum of the parts.

I didn't even have to help clean up!

One of the perks of being a cat, I guess.  Daisy just gets to make messes, not clean them up.  And if anyone could call and talk to Daisy about her recent habit of knocking our large containers of coffee creamer from the kitchen counter (where Daisy is NOT supposed to be) to the floor and spilling it all over the place, we'd really appreciate it.  

In any event, we here hope that 2021 is a banner year for all!  Stay safe and well, all!

Gateau Basque!

Since my retirement from teaching, I have had a lot of time in which to randomly appreciate life, LadyRanger, Daisy, my house and, really, most of my environment.  It's been a boon to me.  One of the things I have really started enjoying is baking.  I've always been a full partner in the cooking arena (really, when LadyRanger and I are in the kitchen together, working on our fancy Saturday night dinner, it can look like modern dance!) but I've not done much of the baking before.

LadyRanger does all of our bread baking.  I get to do the tangential baking. Y'know, biscuits, cornbread, and of course, the sweet stuff.  My chocolate-chip-cookie-fu is strong.  I have been branching out, though.  My latest creation was Gateau Basque!  It is a really lovely pie/cake combo.  It's got a cakey shell filled with cherry preserves and vanilla custard, and covered with another cake-like crust.  While my attempt wasn't as pretty as the professional's, I think it was pretty nice.

The big problem with the gateau (the french word for cake) was purely linguistic.  Daisy misheard the pronunciation of gateau, and doesn't speak enough french to guess at a meaning.  this lead to an unfortunate misunderstanding!

I had to do some fancy dancing around the whole phonics/foreign language issue.  Fortunately, I managed to convince her that she'd merely misheard me, and that the name of the cake sounded far more acceptable and significantly more delicious that she'd thought....

Wait, what's that you say?  Gateau BATS?  My, that does sound scrumptious!  I'd eat the heck outta that.  I'll go catch you some more bats!  Carry on, then, save me a slice!

Daisy was actually convinced I wasn't a monster in time to help us decorate the tree.  She was her usual, helpful self.

Another day in stir

Actually, I can't really say that with any justice.  I am doing fine not going out.  I don't really have any great desire to go shopping or see a movie in a theater or anything like that.  I do miss being able to do my job with my kids and my colleagues.  All this elearning that we're planning and preparing is not close to the same.  I think that the vital part of my job comes in the face-to-face interaction with my students.  Even through video-conference, that is lacking.  Teaching at one or two or fifty removes just ain't getting it done.

I also miss seeing my good friends on my guy's night. I don't really have an urge to go out and mingle with the masses, though.

I think that one reason I'm coping so well is that I have a lively home life.  LadyRanger is intelligent, quick-witted and one of the few people on earth who can reliably make me laugh.  So is Daisy.  She is an antic little gray ball of entertainment.  As I've mentioned earlier, she seems to be settling into adult cat habits.  Sometimes she its still for as long as 8 minutes! In A Row!  That's when I bother her with the camera.  She does like looking out her windows.  And the weather's been so nice that we've been able to open them, so she can sniffy the breeze.  That makes her happy.

The delight I feel in home is also supported by the fact that we are lucky enough to have time to indulge in some of our hobbies.  We've done some yard work (poison ivy can die in a fire). We've also been able to do the prep work for some of our more elaborate Saturday dinners.  I put together some creole spices and mad some shrimp stock over the last couple of weeks.  last night we sat down to homemade shrimp etouffe!

Special Guest Cat Edition

We've got a couple of cats that have long awaited their debut on this page.

We'll start with the photo taken during our most recent visit to our state zoo.  I know this is a beyond awful picture, but it's the best I could do under the circumstances...

If you look close, you can see Cosmos the Sand Cat!  We've been a fan of Sand Cats ever since we first saw the famous Canyon on the Big Cat Rescue youtube channel.  We never thought we'd see one in person.  Cosmos was zipping around his enclosure and it was pretty dark (sand cats tend to be nocturnal to avoid the desert sun)(smarter than englishmen!) so my photo ain't great.   The ones in my head are much better.  If you're not familiar with the Sand Cat, look it up.  They are fierce little bundles of cute.;

Our next guest cat has been a neighborhood favorite of ours for probably better than a decade.

Meet Little Gray Guy.

Little Gray Guy belongs to an elderly gentleman who lives a couple of blocks away.  The gentleman has named LGG "Baby" but we'll stick with Little Grey Guy.  LGG's human has often said to me "I wouldn't take a million dollars for that cat!"  LGG's an indoor/outdoor cat, full of intelligent confidence.  We've gotten to know him over the years and now, if he's lounging around his porch, he'll come trotting out to the street to say hello and get some pats.  The funny thing is that if we don't love on him enough and try to leave he'll jog next to us as we walk and slap the tops of our shoes to get us to stop.  He's usually successful.

Little Gray Guy can be a real street tough, though.  He's leary of cars, but he fears nothing on four paws or in shoe leather.  We had a couple of stray large, pit-bull-y dogs wandering the neighborhood for a couple of days and they made the mistake of hassling LGG in his backyard.  As his gentleman told me:  "I was in the kitchen, saw the dogs.  Heard some terrible yowling, thought 'they're killin' my cat!'  Grabbed a broom and ran out..."  He saw one of the dogs clearing the 6 foot fence on the fly spouting a rooster-tail of blood.  The other was headed towards the fence with Little Grey Guy on his face ripping him a new one.  As that wounded, terrified dog went over the fence, LGG dropped off, yelled "And don't EVER come back!", sauntered over to his now-safe human and, unscathed, had a snack.  What. A. Cat.

As for our resident cat?  She's doing well.

Yep!

Don't know if she's as potent as Little Grey Guy but she surely loves to play.  She prefers to play with us, but she is not hesitant about solo play.  She is one energetic young cat.  Daisy has become willing to snuggle a bit as she's matured.  She usually comes up and naps on my legs as we watch a bit of tv in the evenings.

We were both feeling a bit sleepier than the norm last night.  The reason?  A big production number in the kitchen yesterday.

...fried (pardon the state of the cook-top.  we're usually much neater...).  This was our first attempt EVER at deep-frying anything, as well as our first attempt at this recipe.  It turned out wonderfully!  We had some tamarind/date chutney, some harissa (home made) and some tahini/sour cream sauce (also home made) to garnish the dumplings.  We had a side of Gujarati Green Beans and a good wine and enjoyed the evening thoroughly.

Oh, poor neglected street cat, with no one to love you!  (she hates it when I say that..) Guess I'll go make it up to her by hauling out the treats.  She deserves them.  She's a good cat!

Just a Quick Note...

...to let you know all is well at ChezRanger.  Daisy is doing fine.  She's been enjoying the breeze from the ceiling fan whilst lounging in her cat-nest.

The Blanket Stack

Wow. Just...Wow.

Had a most(ly) lovely night last night.  LadyRanger and I had a culinary adventure and made Shrimp Etouffe!  It was wonderful.  And yes, as the recipe calls for, we made our own shrimp stock and creole seasoning.

Yes, I know...the tower of rice seems a bit...odd...but I was trying to recreate the effect from the Cajun Catfish Company, the Memphis restaurant that served me my first etouffe.  The proportions of the professional rice tower were much more aesthetic.  If you're ever in Memphis, eat at this spot.  Divine. 

Our home made version was as delicious as could be, and the humans were enraptured.  Try this.  Though there are lots of moving parts each is simple.

The only wrench in the works of the evening was poor Maddie.  She'd seemed to be entirely herself, as seen in this picture:

Hairball
When suddenly she hopped up and horked up the *most massive* hairball I have *ever* seen.  Longer than a sausage link and at least twice as thick.  Smelled really bad, too.  And this is after frequent brushie sessions...I guess it it really the season of falling fur.  She seems to be pretty much her usual self, though a bit wrung-out and tired, but who could blame her?

Pic taken just this morning, moments ago.  I hope she doesn't have to go through that again.  I keep telling her that if she'd only let me brush her tummy she wouldn't have to worry about things like this, but the tummy is a no-go-zone. <sigh>

Saturday Morning

It's been a busy week here at ChezRanger.  I've been gearing up to head back to the classroom.  Teachers reported to school last Monday and we've been plugging away in our rooms getting things ready to meet parents and students.  I'm usually pretty ready to get back to the job after a summer, but it's usually a demanding and hectic time.  One of the casualties has been my established summer morning ritual with Maddie:  morning brushies.  Most days since Mid-June I've gotten up, made coffee and sat down in the sunpuddle on the floor and indulged myself and the cat with 10 minutes of thoroughly enjoyable grooming.  Getting up earlier and having to move through the morning much faster has made it rather impossible during the weekday, so I guess I'll just have to restrict this blissful moment to the weekend.  Here are a couple of pics from yesterday:

Another good Saturday moment?  Dinner with LadyRanger.  Last night?  Thai fried rice with pineapple! (Khao Pad Supparot)(!)

That's right!  Served *in* the pineapple.  Boo-yah!  And the interesting note?  The Argentinian Torrontes wine went perfectly with the Thai dinner.  Multi-culturalism at its best.

I'd also like to report on another lovely dinner.  LadyRanger and I made Tortillitas with Shrimp!  Got the recipe from this guy.  If you enjoy a good food, this is worth watching!



 

Here's a link to the recipe in a written down form.  It is a really tasty, savory dish.  I was really impressed that our tortillitas looked just like the ones Mr. Bittman made.  *Quite* cool.  And really, really tasty.  (note:  I did not try to flip the tortillitas the cool way.  Didn't want to eat off the floor.  Didn't seem to detract...)

Miss Maddie, not being a seafood girl, was unimpressed.

Maddie papasan3 Meh.  Let me know when you make it with turkey.  *That's* when I'll wake up.

A final note:  Mr. Bittman has something like 70 episodes of his show on YouTube, as well as an archive on the NYT website.  Worth a look.  Lady and I already have plans to make his Pear-Upside-Down Cake.  We'll let you know how it goes!
